Ingredients for 4 servings
For the pancakes
- 250 ml coconut milk
- 200 g all-purpose flour
- 50 g Blenuten ® vanilla flavour
- 2 eggs
- 100 ml water
- Salt to taste
- Pandan leaf paste to taste
For the pancake filling
- 250 g fine-shredded coconut
- 150 g Blenuten ® vanilla flavour
- 2 tablespoons cinnamon
- 100 ml water
Preparation
To make the pancake
- Combine the flour, Blenuten®, coconut milk, eggs and salt. Stir in a bowl until the texture is smooth.
- Add water gradually while stirring until the dough is homogeneous. Then, beat the dough until there are no more lumps and finally add the pandan leaf paste to the dough.
- Add the butter or cooking oil to a small frying pan. Pour about 3 or 4 tablespoons of dough into the centre of the pan and cook the pancake for one minute on each side.
- Put the pancake on a plate and repeat the process, stacking the pancakes between sheets of greaseproof paper.
To make the filling
- Combine the coconut, salt, Blenuten ®, cinnamon and water in a frying pan.
- Stir continuously over medium heat until the water content decreases, and the mixture becomes dry.
Put about a tablespoon of the pancake filling in the centre of the pancake and fold the left and right ends like a crepe or a Mexican tortilla. Finally, roll and enjoy!
